Mini gingerbread cookie pies

In case you are looking for an emergency dessert for your Christmas table, I thought I would share with you these mini gingerbread cookie pies from Eclectic Recipes. * To make the cookie pies all it takes are ingredients and instructions from Eclectic Recipes

Divine S’more Truffles

Lately s’mores have become very popular, especially now that winter has arrived and we actually need the fires for warmth. We have also seen s’mores in almost every shape and form but we have never seen s’more chocolate truffles.

* Darla has taken the already delicious s’more and fashioned s’more truffles that are topped with crumbled cookies and a mini marshmallow

Twisted Flaky Cinnamon Bread

Can you believe it’s already September?! The year seems to be flying by, although I always seem to say that at this time of year. It’s already time to start thinking about what to do for Christmas, what to serve, who’s coming over and the snacks and nibbles that are always around.

This year, I think I will make this gorgeous Twisted Flaky Cinnamon Bread.

*this recipe is from All Colours Of The World, making it should be a snap

Bourbon Pecan Chicken

Everyone needs a great go-to recipe for chicken to keep the midweek meals from becoming mundane. I think this Bourbon Pecan crusted chicken would be wonderful to try out when inspiration is needed.

The bourbon whiskey is used in the sauce and brings a delightful kick, so make sure you use the good stuff.

Blueberry Swirled Frozen Yoghurt Sandwiches

Berry season is a great time to get into the kitchen, starters, mains and desserts, all can benefit from a little berry madness. These blueberry swirled frozen yoghurt sandwiches are the result of Nicole from The Galley seeing the recipe on her copy of The Gourmet magazine and adapting it to suit her taste.

*If you prefer a different compote, you can find Nicole’s adapted recipe on The Galley

Deal With Not Quite Ripe Apricots

Sylvie is a lady after my own heart, I am a fan of anything dolloped with or sinking into thick gorgeous yoghurt (Greek or otherwise). Sylvie was tempted by a couple of early, not quite ripe apricots at her local market, however when she got the little darlings home, she found she was too impatient to let them ripen all on their own. So she helped the flavour along a little, by poaching them in white wine, a vanilla pod and honey.

Sylvie’s recipe for Poached apricots is available on her blog, Gourmand In The Kitchen

Easy Peanut Brittle

With all the picnics and parties you are going to be invited to this summer, it’s a great idea to be able to pull something out of your recipe cache in a party emergency.

That’s is what this recipe for peanut brittle is, it’s made in the microwave so it is made literally minutes before you go out the door and can be left to harden while you go make yourself presentable for the party. And if you use salted peanuts, you can have the salty sweet action that’s so popular in food right now.

This microwave peanut brittle recipe is from Plain Chicken, who also has other treat recipes

Change Your Life With Homemade Marshmallows

Once you have homemade marshmallows, your life will change, I promise. Never again will you bother to buy the jet puffed rubbery pillows at your local grocery store. You will also become the most likely person to be invited for camping trips, Christmas parties and anywhere a s’more is served, just because of these marshmallows. I’ve seen a few recipes around, but this recipe from Carrie at Denver Bargains has to be the easiest.
